The One about Cauliflower with Cheese and Butter Sauce

I typically try to fit in a review of a travel item or recipe and I know it’s been a long while since I have posted a recipe.

So, I decided one day to try to come up with something different with cauliflower.

I posted a basic recipe of baked cauliflower and also my first attempt at cauliflower pizza, but this time, I’m trying out Cauliflower with Cheese and Butter Sauce.

The ingredients:

  • A head of cauliflower, cut and made the cauliflower to florets
  • Two tablespoons of red pepper flakes (you can add more if you want a bit more kick)
  • A cup of capers
  • A cup of grated mozzarella cheese (you can use cheddar or jack if you prefer those cheeses)
  • A stick of unsalted butter
  • And then for spices I used sea salt, herbs and spices but you can use salt and pepper

I chose not to use flour or milk for this experiment.

First thing is to steam the cauliflower for about 10-15 minutes.  While steaming, go ahead preheat your oven at 375 degrees F.

I then put a stick of butter and the capers into a pan, along with the sea salt, herbs and spices that I had then after a few minutes, I followed up by adding the the cauliflower florets.

I cooked the long enough for the cauliflower florets to soak up the butter and cooked for about 5-10 minutes on medium to high heat.

Afterward, I took the cauliflower with the butter sauce and capers and put it in a baking pan (I used a glass baking dish).

I then sprinkled red pepper flakes and then topped the cauliflower with the grated mozzarella cheese.  Guys, if you don’t want to grate them on your own, you can just get a bag of grated/shredded mozzarella.

I then put it in an oven at 350 degrees F for about 10 minutes.  Unless you like your cauliflower golden brown, then you can wait 20 minutes.

If the cheese is fully melted after five minutes, it’s time for plating.

And that’s it!

To be truthful, I wasn’t sure how it would turn out because I didn’t use flour or milk to make the sauce, but the combination of the butter sauce and the melted cheese combined with the capers and red pepper flakes made this dish quite delicious.
