The One about the Stuffed Artichoke with Sundried Tomatoes and Feta

I made grilled artichoke stuffed with feta and sun dried tomatoes.

The recipe is quite simple:

  • 4-6 artichokes
  • 4 oz. feta cheese (what you can get at the grocery store in a container)
  • 1/3 cup of panko bread crumbs
  • 2-3 tablespoons of sundried tomatoes in oil (which you can find easily at a grocery store)
  • 2 teaspoons of extra virgin olive oil
  • salt and pepper
  • 1 lemon

I recommend steaming the artichoke first after cutting part of the bottom stem and top of the artichoke and removing the bottom leaves.

Once you see the artichoke changing color and artichoke is not hard, taking it out and cut it in half and remove the hairy choke with a spoon.  This is easier to remove that way.   Originally when I took the photos, I removed the choke first after I cut it in half and then boiled it.  Took too long doing it this way, so I would boil it first then cut it in half and remove the choke that way.

Meanwhile, while the artichokes are steaming, take your feta, sun-dried tomatoes in oil, panko bread crumbs, salt and pepper and mix in a bowl.

Put the two teaspoon of extra virgin olive oil and juice from half a lemon on top of the artichoke half and then you lay it face (cut side) down on the grill.

After grilling the artichokes, go ahead and put them in a baking pan and put the mixture and stuff the top side (face side up) of the artichoke and broil for five minutes.

And that’s it.  It’s a simple, delicious recipe.  The only thing that does take a while is having to steam, removing the choke of the artichoke, grilling it and boiling.  So, it does take a little time but it’s well worth it.
