The One about why your boiled egg is brown (Ajitsuke Tamago)

For some people, going to a ramen restaurant in Japan is a completely fresh experience.

From the meat cuts to the various things that can be served. But for some, when they order a boiled egg, they notice the boiled egg is brown. Why is that?

This type of boiled egg is called “Ajitsuke Tamago”, a boiled egg which was marinated with soy sauce, mirin, sugar, water and other herbs.

This can be found in many Asian countries, not just Japan, considering its roots are originally from China.

But you first boil the eggs and once they are done, peel the shells off and add them in a plastic zip bag with the sauce and leave it for 2-3 hours.
