Kura Sushi is focusing on domestic aquaculture due to soaring prices of imported mackerel. We visited the aquaculture site where they are using AI. By automatically adjusting the amount and timing of feed, and having humans monitor the situation with cameras, they are aiming to reduce labor and costs.
Mackerel produced in Ehime is served at Kura Sushi restaurants and has received high praise for its taste. By switching to domestic production, which is less affected by the weak yen, they aim to stabilize supply and costs.
