One of the popular artisanal French Boulangerie around the world is Maison Kayser Paris, which was founded by Eric Kayser in Paris back in 1996.
Eric Kayser has a reputation of being one of the most talented artisan bakers of his generation. Starting his baker apprenticeship at the age of 14 and perfecting his technique for five years at the “Compagnons du Devoir et du Tour de France” (an exclusive orgaization of France’s finest craftsmen and artisans) and even trained bakers for 10 years at the inBP (French national school of akers).
In 1996, Kayser opened his first bakery, Rue Monge, in Paris and it would spawn over a hundred Maison Kayser shops in over 20 countries.
In Japan, a man named Kimura Shuichiro, who learned from Eric Kayser, established Maison Kayser Paris, with Eric Kayser as the director and Kimura as the Representative Director.
Utilizing their original flour and high quality butter, Maison Kayuser uses carefully selected ingredients and bakes delicious bread every day in a traditional French method using natural yeast.
The menu at Maison Kayser is numerous, especially seasonal offerings and when it comes to shops, while all over Tokyo and Japan, I often visit the location at Tokyo Midtown in the Akasaka area.
Compared to other bakeries/boulangerie in Japan, Maison Kayser is a wee bit a more expensive. But compared to other bakeries, it’s often crowded and many people are in line.
I happen to visit Maison Kayser every year when visiting Japan and for me, the quality of their baked goods make a difference. Also, it gives me a reason to visit Tokyo Midtown aside from Christmas time or cherry blossom season.
I decided to visit Maison Kayser and eat near the cherry blossoms back April. That’s one of the cool things about eating at Tokyo Midtown but while I tried to eat outside closer to the trees, the sunlight was really heating these up. So, I moved to the shaded portion.
I decided to try their Choux Parisien, their Cherry Blossom Eclair and Chausson aux Pomme.
All three were simply delicious.
But really, every thing I’ve eaten at Maison Kayser has been delicious.
I don’t think you can go wrong eating at this boulangerie.
But I definitely recommend visiting Maison Kayser, may it be in Japan or some country around the world!
