The One About the Shrimp Roll

Want to make something quick and healthy and can feed a lot of people?

I put my little spin to the shrimp roll.

Ingredients:

1 pound of shrimp = 6 servings, 2 pounds = 12 servings  (try to purchase shrimp without the shells, no tail and are veins removed)

Celery with leaves and breaking off 4-5 sticks

Fresh tarragon (or 1.5 tablespoon of ground marjoram)

2-3 tablespoon of Mayonnaise

salt and pepper to taste

Feta Cheese (I chose garlic and herb)

Choose your bread!  I chose french bread, whole wheat buns, hot dog buns, it’s up to you.

Let’s Start!!!

The first thing you want to do is get a sauce pan and put in your 1 or 2 pounds of shrimp.  All you need is 3 cups of water and let it boil.  This will take about 15-20 minutes and when you see the water boiling quite a bit, try the shrimp to make sure the flesh is white and not clear or gray.  Try it and you’ll know it’s done!

Meanwhile, take your four celery sticks and cut off the ends of each stick.  Then chop the celery into small pieces.

Ad all ingredients such as the shrimp, celery pieces, tarragon or ground marjoram and the 2-3 tablespoon of mayonnaise and mix.

Meanwhile, you can toast your french bread or hot dog buns in your toaster oven or quickly put it into your oven after heating.  And wait for a few minutes.  You don’t want the bread to be too crunchy.  You wanted to have a little crisp but also some softness.

Start spreading the mix into your roll/bun.

Then top with feta cheese.  You can put other additions such as tomatoes or whichever you’d like to spruce things up.  I do like the flavor the feta cheese adds to the shrimp roll and it’s delicious!
